Job Description Job Description Summary of Position:
Executive Sous Chef assists the Executive Chef in being responsible for all aspects of kitchen management at Nitehawk Cinema. Position oversees service and manages kitchen staff, including sous chef, line cooks, porters, and prep cooks. Organizes and communicates with all departments as necessary to achieve service goals while cultivating relationships with staff. Works closely with the entire management team in developing Nitehawk Cinema as the premier dinner and movie destination in NYC.
General Duties & Responsibilities:
Responsible for overseeing the daily operation of a high-paced kitchen.
Maintains high professional standards while creating a friendly work environment for all staff.
Lead and direct the kitchen staff in delivering appetizing, consistent, attractive meals prepared in a pleasant, sanitary, and efficient manner.
Oversee the work schedule for line cooks, prep, and porters to ensure coverage for events and special programming/schedules. Monitor schedule to be in line with anticipated sales and labor cost.
Manage and participate in daily prep. Keep all items consistent and oversee quality control. Maintain all walk-ins and storage areas and assure staff is aware of proper storage for all food products.
Assist in overseeing food cost to budgetary requirements. Place food and supply orders as needed. Receives product, verifies invoices, and ensures freshness of products.
Menu development and updates:
Assist the Executive Chef with the creation of each menu. This includes coming up with new items for seasonal menus, special events, and movie-inspired cinema specials. Maintain recipe documents to ensure standards are always met. Responsible for updating necessary prep sheets and inventory records. Weekly inventory and invoice tracking.
Staff:
Responsible for knowledge of Nitehawk, as well as State and federal, staff policies and guidelines. Handles hiring and enforces disciplinary actions, such as write ups when necessary. Ensure all employees are trained properly and are performing to Nitehawk standards and health code standards. Ensure staff is motivated and engaged during service and throughout the shift. Continues to train and builds the skills of staff members. Ensures a hard-working kitchen environment while letting people express their own individual personalities. Must be able to provide feedback in a consistent manner. Lead by example and give direction in an efficient manner.
Other:
Apply safety guidelines to the kitchen. Ensures proper use and maintenance of all kitchen equipment.
Handles maintenance needs for the kitchen. Communicates with FOH staff on issues as they arise.
Performs additional responsibilities as requested, including responding to any urgent correspondence while away from the office if necessary.
Qualifications:
Has a high level of communication via emails and in-person.
Computer literate, Microsoft Office, Google Docs, inventory software (Craftable)
Be able to work in a standing position for long periods of time (up to 12 hours), Be able to reach, bend, stoop and frequently lift up to 50 pounds, Must have the stamina to work 60 hours per week when necessary. Nights, weekends and holidays a must.
Must hold a NYC Health Food Handler license
Must be fully vaccinated (COVID vaccine)
5-6 year upper management in kitchen experience.
